This is a pretty basic and easy lentil soup, but the carrot gives it a nice hint of sweetness.
1 C red lentils 4 C water or broth 1 large carrot 1/2 onion garlic olive oil or butter lemon juice salt
Chop and sautee onion and garlic in olive oil or butter. Add lentils, carrot, and liquid, boil until done. Puree with immersion blender and add lemon and salt to taste.
